Fausse araignée

The 'false spider', a twin muscle of the araignée in the tende de tranche. It looks similar but is more ragged and less presentable, so Interbev suggests it for fondue bourguignonne rather than whole steaks.

What it is and how it is used

Interbev names the fausse araignée as one of the six muscles of the tende de tranche, a twin of the araignée that resembles it but is more ragged ("plus déchiquetée") and less presentable. Its suggested use is cubed for fondue bourguignonne. The same page notes that araignées were once braised, before they became prized as steaks.
