What it is

The UNECE standard gives dessus de palette as the French name of its item 2304, blade undercut, prepared by removing the M. subscapularis from the medial surface of the shoulder blade; the muscle has three parts and is trimmed to the buyer's specification. Interbev's macreuse page lists dessous de macreuse / dessus de palette as a piece for the grill or the pan, without further detail. The sources opened say nothing more on its texture, so none is claimed here.
