Method

  1. Cover the dried chillies and the dried shrimp with boiling water in separate bowls and soak 20 minutes. Drain well and blend with the rest of the paste ingredients to a smooth paste.

  2. Heat the oil in a large saucepan over medium heat and fry the paste, stirring, for 2 minutes until fragrant.

Why Frying the paste in oil releases the aromas of the spices and cooks out the raw shrimp paste.

    Timer · 2 min2:00
  3. Add the stock and palm sugar and bring to a simmer. Add the chicken, return to a simmer and cook 4 minutes. Add the prawns and cook 1 minute.

    Timer · 5 min5:00
  4. Add the coconut milk, fish balls, tofu puffs and bean sprouts. Stir gently and bring almost to a simmer, then cook on low heat for 2 minutes, until the prawns are just cooked and everything is hot.

Why Coconut milk can split if it boils hard; keep it just below a simmer.

    Timer · 2 min2:00
  5. Meanwhile put the noodles in a large bowl, cover with boiling water for 2 minutes and drain. Divide the noodles and laksa among bowls, top with fried shallots and mint, add sambal if you like and serve with lime.

Substitutions

  • Candlenuts → Macadamia nuts (a tree-nut allergen).
  • Fresh rice noodles → Dried rice vermicelli, soaked as the packet says.

Common mistakes

  • Boiling after the coconut milk goes in: it splits and the prawns toughen.
  • Skimping on frying the paste: the broth tastes raw.

Storage & reheating

The broth keeps 2 days in the fridge without the noodles and seafood; reheat until it just simmers and add fresh noodles.

Safety

Allergens: crustaceans (prawns, dried shrimp, belachan), fish (fish balls), soy (tofu puffs), celery (many stocks). Fish balls may contain wheat: check labels.

Not a dish of subtlety

Leanne Kitchen's recipe, first printed in Feast magazine and published by SBS Food, presents laksa lemak as a Malay curry laksa traditionally made with rice noodles, prawns, chicken, tofu puffs and fish balls. She calls it not a dish of subtlety: it is meant to be sweet, sour, salty and spicy at once. Compare nasi lemak, also built on coconut milk and a chilli paste.

Paste, broth, quick poach

The flavour is in the paste: dried chillies and dried shrimp, soaked and blended with shallots, galangal, garlic, lemongrass, candlenuts, shrimp paste and ground spices, then fried briefly in oil. Stock and palm sugar make the broth; chicken and prawns poach in it for only a few minutes, and the coconut milk goes in last, kept below a simmer.
