Method
Mix all the marinade ingredients except the chicken in a large bowl. Add the chicken, coat it well and refrigerate for 1 hour or overnight.
Why Yoghurt and lemon season and tenderise the meat; it cooks raw under the rice, so the marinade carries all its flavour.
Timer · 1 h60:00Rinse the rice until the water runs clear and soak it 30 minutes. Bring a large pan of water to the boil with the cardamom, cloves, bay leaf, cinnamon and salt. Cook the rice until about 70% done, firm with a small white core, and drain at once.
Why The rice finishes cooking in the steam of the pot; fully cooked rice would turn to mush.
Timer · 30 min30:00Knead the flour, water and oil into a firm, stiff dough.
Spread the chicken over the base of the heavy pan. Layer half the rice on top and drizzle with half the saffron milk, some ghee and a handful of fried onions. Repeat with the rest of the rice, saffron milk, ghee and onions.
Put the lid on and press the dough around the rim to seal it. Cook on high heat for 5 minutes, then on very low heat for 30–40 minutes, until the chicken is tender and the rice is cooked.
Why This is the dum: the sealed pot traps steam so the chicken and rice cook together. Setting the pan on a cast-iron griddle or tawa helps prevent burning.
Timer · 45 min45:00Turn off the heat and leave covered for 10 minutes. Break off the dough, lift the lid, fluff the layers gently with a fork and serve with raita and cucumber.

Substitutions
- Ghee → Neutral oil, as the source allows for the marinade.
- Saffron milk → The source suggests adding a few drops of kewra or rose water for aroma; it does not replace saffron's colour.
Common mistakes
- Boiling the rice fully before layering: it overcooks in the dum.
- A loose seal: steam escapes, the top rice stays hard and the base burns.
Storage & reheating
Keeps 2 days in the fridge. Reheat covered with a splash of water until piping hot.
Safety
The chicken goes in raw under the rice: make sure it is cooked through, with no pink at the bone, before serving. Gluten is only in the sealing dough. Allergens: milk (yoghurt, milk, ghee).

A dish of the Hyderabad kitchens
Fuzz Ali's recipe for SBS Food describes this biryani as a signature dish of the royal kitchens of Hyderabad, slow-cooked by the layered dum (steam) method, and as a meeting of Mughlai technique and South Indian flavours. We have not found an independent historical source for the dish's beginnings, so the atlas gives that account as the author's.
Raw meat, part-cooked rice, sealed pot
The chicken goes into the pot raw, in its yoghurt marinade. The basmati is boiled with whole spices only until about 70% cooked, with a small white core. Layered over the meat with saffron milk, ghee and fried onions, both finish together in the pot's own steam.
A strip of stiff dough pressed around the lid seals the pot. Five minutes on high heat brings the contents to steam; 30 to 40 minutes on very low heat does the rest, followed by 10 minutes' rest before the seal is broken.
