Gnochi de susini

Large potato gnocchi from Trieste and Gorizia, each wrapped round half a plum whose stone is replaced by butter-fried breadcrumbs with sugar and cinnamon. They are boiled, then dressed with the same butter, breadcrumbs, sugar and cinnamon. They are served as a first course or as dessert.

How they are made

ERSA's atlas describes large gnocchi of potato and flour, each filled with half a stoned plum. The stone is replaced by a filling of breadcrumbs browned in butter, sweetened with sugar and cinnamon. The fruit is enclosed in the dough, and the gnocchi are floured and dropped into boiling salted water until they rise. They are dressed with melted butter, breadcrumbs, sugar and cinnamon, echoing the filling.
