Carnaroli

A risotto rice created in 1945 at Paullo, near Milan, and now grown mainly in the Piedmont–Lombardy rice district; often preferred by chefs because its higher amylose keeps the grain firm while the surface turns creamy.

A pale polished rice grain, illustrated for Carnaroli.
