Calasparra PDO

Arroz de Calasparra

Protected designation of origin for Bomba and Balilla x Sollana rice grown on river terraces of the Segura and Mundo at 341–500 m in Calasparra and Moratalla (Murcia) and Hellín (Albacete), in a mountain setting unlike Spain's coastal rice areas.

Varieties and setting

The registration file covers white rice (Extra and I categories) and brown rice of two varieties. The more widely grown, Balilla x Sollana, has a processed raw grain 5.3–5.6 mm long and 3.10 mm wide (the length on this page is the midpoint) with 20.52% amylose; Bomba is described as rounder and harder.

The fields are terraced down to the rivers at 341–500 m, with a Mediterranean climate of hot summers, harsh winters and under 400 mm of rain. A two-year rotation alternates rice with wheat, maize and legumes, which are ploughed in as green manure before the fields are flooded.
