Baldo

An Italian long-grain risotto rice with a crystalline (translucent) grain, bred at the Vercelli rice research station from Arborio × Stirpe 136 and registered in 1967. With Roma it gives its name to the legal 'Roma or Baldo' rice category.

A pale polished rice grain, illustrated for Baldo.
Baldo — editorial grain study, polished, not to scale. Appearance alone does not establish variety or protected origin.

Profile

RisoItaliano dates Baldo's breeding to 1964 at the Stazione Sperimentale di Risicoltura in Vercelli, the research station of the Ente Nazionale Risi, and its register entry to 1967 (the Ente's own variety sheet gives 1977 as the year of introduction); the Ente maintains its seed. In the official register its grain measures 6.9 × 3.1 mm (length-to-width ratio 2.2) and it is one of the varieties that may be sold under the food name "Riso Roma o Riso Baldo".

The variety sheet gives an amylose content of 16.8% and a caryopsis of 7.35 × 3.27 mm. It is listed among the varieties allowed for the Riso di Baraggia Biellese e Vercellese PDO and the Riso del Delta del Po PGI.
