Balilla

A historic Italian round-grain rice selected from Chinese Originario, with all the typical traits of the Italian 'Originario' (round) rice class. Small, pearled grains that soften readily make it a rice for puddings, soups and timballi.

A pale polished rice grain, illustrated for Balilla.
Balilla — editorial grain study, polished, not to scale. Appearance alone does not establish variety or protected origin.

Profile

The official register places Balilla in the "riso a grani tondi ovvero riso tondo ovvero riso Originario" class: short, round, small grains. RisoItaliano gives 1924 as its year of breeding and Virgilio Forni as breeder; the Ente Nazionale Risi sheet records a 1967 register entry and a caryopsis of 5.27 × 3.11 mm (ratio 1.69) with 18.5% amylose. Balilla is a parent of Roma and is listed for the Riso di Baraggia Biellese e Vercellese PDO.
