Boneless fore shin in the British system

This entry concerns fore shin. AHDB’s Shin B003 specification describes a boneless fore-shin cut trimmed of excess fat. Its photographs show an irregular whole piece with conspicuous pale connective-tissue seams, rather than a round slice containing a marrow bone.

Boneless fore shin, a bone-in cross-cut shank and the separately specified needle are different preparations. The cutting code helps identify which is intended when a recipe or supplier uses the general name shin.
