Shrimp croquettes
garnaalkroketten / croquettes aux crevettes grises
Croquettes of grey North Sea shrimp: a thick, shrimp-flavoured béchamel set with gelatine and egg yolks, cut, breaded and deep-fried so the crust is crisp and the inside runs. Jeroen Meus's recipe builds the sauce on a stock made from the shrimps' own heads and shells.

Breading and frying
Method
Peel three quarters of the shrimp and keep the heads and shells. Grind the heads, shells and the remaining unpeeled shrimp to a paste in the food processor.
Why Most of the flavour is in the heads and shells; they become the stock that flavours the whole croquette.
Soften the onion, carrot and celery in the olive oil over a moderate heat for a few minutes. Add the thyme, bay and ground shrimp, then the tomato purée and cook out its raw taste. Add the cognac and let most of the alcohol evaporate.
Pour in the wine, milk and cream, season, bring gently to the boil and simmer for 15 minutes. Strain through a sieve in batches, pressing hard. Taste and season.
Timer · 15 min15:00Soak the gelatine in cold water. In the second pan, melt the butter, whisk in the flour and cook briefly until it smells of baked biscuits (roux). Whisk in the hot shrimp stock: it thickens at once. Lower the heat and keep whisking for a minute.
Timer · 2 min2:00Squeeze the gelatine and stir it in. Off the heat, stir in the egg yolks one by one, then two thirds of the peeled shrimp (keep the rest for serving).
Oil the dish, spread the filling in it, press baking paper or cling film onto the surface and refrigerate for half a day until firm.
Why Gelatine, yolks and a thick roux make a filling firm enough to cut cold but molten when hot.
Timer · 12 h720:00Cut the filling into blocks of about 6 × 4 cm (about 75 g) and roll them briefly to round the corners. Coat each in the flour mix, then the egg, then the fine panko, with no gaps.
Why A single weak spot lets the filling burst out in the fryer.
Heat the oil to 170 °C. Fry a few croquettes at a time for 5–6 minutes until golden brown and hot to the centre. Serve with lemon, fried parsley and the reserved shrimp.

Substitutions
- Grey North Sea shrimp → There is no true substitute: other cooked shrimp give a milder, sweeter croquette.
- Panko → Fine dry white breadcrumbs.
Common mistakes
- Cutting the filling before it has set: the croquettes lose their shape.
- Frying too many at once: the oil cools and the crust soaks up fat or splits.
Storage & reheating
Breaded, unfried croquettes can be frozen and fried from frozen (allow a little longer). Fried croquettes are best eaten at once.
Safety
Contains crustaceans, gluten, milk, egg, celery and sulphites (wine). Hot oil: never fill the pan more than half full and keep children away. Cool the filling quickly and keep it refrigerated while it sets.
Allergens

A Flemish coast classic
Jeroen Meus calls the croquette of North Sea shrimp one of the most sought-after warm starters in Belgium. The grey shrimp are sold cooked in their shells; Meus peels three quarters of them by hand and uses the rest, with all the heads and shells, for the stock.
A béchamel that holds
The filling is a very thick béchamel: 250 g of butter and 300 g of flour for about 1.4 litres of liquid, enriched with eight yolks and set with gelatine. That ratio, and half a day in the fridge, lets the cold block be cut into neat pieces. Breading in three stages seals it. In the hot oil the crust sets before the filling melts back into a sauce.
