Taikeng 9

臺稉9號

A Taiwanese japonica cultivar bred at the Taichung station and valued for uniform, translucent grains. Din Tai Fung identifies it as the rice used for its fried-rice dishes.

Location: Central Taiwan, Taiwan

A cultivar used as a benchmark

Taikeng 9 appears as an identified cultivar, not a generic name for Taiwanese rice. The Taiwan Agricultural Research Institute lists its breeder as the Taichung station and highlights uniform grains, transparency and lodging resistance. In experiments comparing cropping seasons, the researchers found that temperature during grain filling affected rice quality. A single starch number should therefore not be assumed to describe every harvest.

Round grains in the wok

Din Tai Fung states that it uses both white and brown Taikeng No. 9 for fried rice. Its ingredient FAQ describes round, slightly transparent grains and a springy texture. Separately, the Taichung station reported the softest gel consistency and best eating-quality performance among three varieties in a second-crop experiment. These support a culinary description without implying a tested household water ratio.
