Method

  1. Heat the frying oil in the karhai over a medium-high heat until very hot. Fry the florets (not the stalks or leaves) in two batches, about 2 minutes each, until light brown. Drain on kitchen paper, letting the oil reheat between batches.

    Timer · 4 min4:00
  2. Carefully add the potato, standing back in case it splashes, and fry 5–6 minutes until golden all over. Drain.

Why Frying first gives the vegetables colour and a firm outside, so they keep their shape when folded into the masala.

  3. In the clean pan over a medium heat, heat the 2 tbsp oil and sauté the onion for 2 minutes. Add the cumin seeds and stir for 3–5 minutes until the onion is light brown.

    Timer · 6 min6:00
  4. Add the garlic and ginger and stir for 2 minutes, adding a splash of hot water if it sticks. Add the tomato and cook 5 minutes until fully integrated.

    Timer · 7 min7:00
  5. Stir in the chillies and salt for 1 minute, crumble in the fenugreek for 1 minute, then mix in the turmeric.

    Timer · 2 min2:00
  6. Add the chopped cauliflower stalks and leaves and cook, stirring, for 6 minutes until soft, adding a little water if the pan dries out.

    Timer · 6 min6:00
  7. Add the fried florets and potato and the coriander, mix gently and cook 2 minutes more. Serve.

    Timer · 2 min2:00

To drink & serve with

  • Eaten with Indian breads, dal and yogurt raita, as the source suggests.

Substitutions

  • Deep-frying → Roast the florets and potato with a little oil at a high oven heat until golden, then fold them into the masala (not in the source).

Common mistakes

  • Throwing away the stalks and leaves: Gurbax Kaur uses them all, cooked into the masala.
  • Crowding the frying oil: the vegetables steam and turn greasy.

Storage & reheating

Best fresh. Refrigerate leftovers within 2 hours and eat within 2 days; reheat until steaming hot.

Safety

No major allergens. Hot oil: never leave the karhai unattended.

Harjit's mum's aloo gobi

The book's introduction to this recipe calls aloo gobi a Punjabi classic cooked in many ways. While filming the television series that accompanies the book, the team tasted versions everywhere and agreed the best was made by the mother of one of their crew members, Gurbax Kaur. SBS tags the recipe as from Madhur Jaffrey's Curry Nation.

Fry, then fold

Many home versions cook the potato and cauliflower in the masala from raw. Gurbax Kaur deep-fries them first, which colours them and keeps them whole, and builds a quick masala in a separate pan: onion and cumin, garlic and ginger, tomato, green chilli, dried fenugreek leaves and turmeric. The chopped stalks and leaves of the cauliflower cook in the masala, and the fried pieces are folded in only for the last two minutes.
