Ofada rice
A popular indigenous Nigerian rice: a generic name for rice varieties grown and processed in communities of Ogun State and nearby areas of the south-west, traditionally soaked, parboiled and dried before milling.

Storage and parboiling
A 2018 study of Ofada paddy (variety OS 6) bought at Mokoloki-Ofada tested farmers' practices: storing paddy for 1–9 months, soaking for 1–5 days and parboiling at 80–120 °C. Amylose ranged from 17.34% to 26.28% and cooked kernel length from 6.32 to 11.90 mm across treatments. The optimum was 5 months' storage, 18 hours' soaking and parboiling at 80 °C, giving a 20-minute cooking time. Raw grain dimensions are not given by the source; those on this page are estimated.
