What the specification says

İpsala rice is white rice of Oryza sativa grown in the İpsala plain: glassy and matte in appearance, with long, thick grains 6.7–7.1 mm long and 2.6–3.1 mm wide, and a thousand-grain weight of 24–32 g. The dimensions on this page are the midpoints of those ranges. The specification links its darker, matte look and low chalkiness to sea air and saline clay-loam alluvial soils close to sea level, and reports an average protein content of 9.02%.

The plain, irrigated by the Meriç and flooded in winter, became one of the province's largest farming areas after embankments were built along the river in the 1960s.
