Profile

Ermes has a red pericarp and an aromatic grain. The breeder's data in the Ente Nazionale Risi sheet give a caryopsis of 8.17 × 2.16 mm, a length-to-width ratio of 3.78 (long B) and 17.7% amylose; the register lists it among the long B rices. RisoItaliano calls it a "child" of Venere and notes that it is rich in anthocyanins.
