La Ratte

An old fingerling, recorded by 1872, of disputed Danish or French origin and long grown in France. Its flesh is dense and waxy; it is often used for Joël Robuchon's purée (his recipe allows ratte or BF 15), which uses about 250 g of butter per kilo of potatoes.
